Sweet Potatoes with Lime Yogurt and Spiced Brown Butter Nuts
Ingredients
2 large sweet potatoes or 3 medium sized ones
~1 cup of plain yogurt
Zest and juice of lime
~1/2 cup of butter
~1/2 cup of toasted hazelnuts
Substitute: pine nuts, walnuts, pistachios, almonds, cashews or a mix of nuts—regardless of the type, toast the nuts first to enhance flavor
Pinch of turmeric, ginger, and paprika
Substitute: use whatever spices you like
Olive oil
Salt to taste

Method
Sweet potatoes:
Heat oven to 425º
Cut sweet potatoes in half lengthwise, rub them in olive oil and season with salt
Put the sweet potatoes on a baking sheet with the interior side down and skin side up
Roast for ~25 minutes—time will vary depending on your sweet potatoes and your oven
Note: if some of the pieces are smaller than others they will finish cooking faster. Take them off the baking sheet and return the others to the oven until they are done cooking
When they are done, the bottom should be browned and caramelized and the whole potato should be soft
Let the potatoes cool for ~5 minutes so that when you put the yogurt on top it does not become runny and watery
Lime yogurt:
While the sweet potatoes are baking, approximately one cup of yogurt with the zest and juice of one lime
Spiced brown butter nuts:
Heat oven to 350 degrees, put your nuts on a baking sheet (no oil) and roast for 6-10 minutes depending on the size/density of the nuts you are using. Shake the pan half way
Note: I recommend always roasting your nuts before using as it enhances their flavor immensely. The best way to know when they are done is to use your senses. You still start smelling a nice toasty/nutty (shocking) aroma when they are ready and the color will deepen slightly.
You can definitely also do this in a skillet on your stove (again, no oil or fat), but they may not cook as evenly
Coarsely chop your nuts—don’t worry about them being uniform in size
Heat 1/2 cup of butter up in a pot on your stove
Add your nuts in and cook for about 3 minutes while stirring
Add a couple pinches of your favorite spices (turmeric, paprika, ginger) and continue to cook for 2ish mins more
Note: if you are using unsalted butter, also add a pinch of salt here
When the butter is done it will deepen in color and smell nutty
