Grilled Lettuce with Avocado Green Goddess Dressing

Ingredients

  • Head of romaine or radicchio

dressing (can be made on its own)

  • 1/2 avocado

  • 1 cup dill and 1 cup parsley (or 2 cups of any combo of soft herbs you like)

  • Juice from 1 lemon

  • 1/4 cup olive oil

  • 1 tbsp mayo

  • 1/2 tsp salt

Method

  • Pulse all the dressing ingredients together in a food processor or blender

  • Cut romaine in half long-ways through the root

  • Heat grill, grill pan, or cast iron until searing hot

    • Note: it is very important that it is extremely hot, because you want the lettuce to be charred on the edge but still crunchy. If the pan is not hot, you’ll have to cook the lettuce longer in order to get that charred edge, which will cause it to wilt/soften throughout.

  • Brush the lettuce with a bit of olive oil

  • Place the interior side of the lettuce onto the grill—grill for 2 minutes

  • Take lettuce off the grill, let cool for a minute, then spoon the dressing over the lettuce

    • Optional: top with flaky salt, herbs, or lemon zest

Note: this dressing can also be used in pretty much any salad, as a dip for crudite, as a spread on sandwiches, or any other way you like!!
